Okay, this is fastest I have ever done a blog. I did this because one of my most loyal readers requested I tell a bit more about the Ice Cream Casserole. Mind you, it’s ninety degrees and the humidity is climbing and I had to go to the grocery store before I could make it. Then, I had to put the groceries away. Then, I had to make the dessert because the ice cream sandwiches were starting to melt. That, my friends, is how easy this yummy dessert is. You can make it on the fly. Read on:
First of all, you will need a 9 X 13 baking dish. Then, you will need to go to the freezer and make room for the dish. Do this first and you will thank me later.
Here is the lovely cast of characters. Aren’t they pretty? It really doesn’t take much.
Make a layer of ice cream sandwiches. Top with half the Cool Whip. No, Cool Whip did not pay me to use this, I just love the stuff. Then, drizzle half the caramel sauce and half the hot fudge which has been nuked so that it is a bit runny. About one minute will do. Sprinkle half the peanuts.
Do it all again. Here is what the start of the Cool Whip onto the second layer of ice cream sandwiches looks like.
Now, it is done and ready to put into the freezer. Make sure you cover with plastic wrap so it doesn’t get all those flavors of frozen pizza, fish, and Italian sausages. It can be kept in the freezer up to two months. Like, why? Nothing lives in my freezer for two months. It’s just not right. Truth be known, I’d forget it was in there. We can’t have that. Here is the actual recipe:
Ice Cream Casserole
9 X 13 baking dish
19 ice cream sandwiches (keep frozen)
1 12 ounce whipped topping, softened (Cool Whip, I like Extra Creamy, of course!)
1 11/12 ounce jar of hot fudge ice cream topping, microwaved just until a bit runny, about a minute
1 11/12 ounce jar of caramel ice cream topping, it’s already runny
1-1 1/2 cups salted Spanish Peanuts, use how much you like.
Cut one ice cream sandwich in half. Place one whole and one half sandwich along a short side of ungreased 9 X 13 baking dish. Arrange eight sandwiches in opposite direction in the pan.
Spread with half of the whipped topping. Drizzle half of the hot fudge topping and the caramel topping onto the whipped topping. Sprinkle half the peanutes. Repeat for the second layer. The pan will be very full. Smoosh it down if you need to.
Cover and freeze for up to two months (I still laugh at this). Remove from the freezer 20 minutes before serving. Cut into squares. Makes 12-15 servings.
