Simply put, vodka sauce is totally yummy and easy. We order it in restaurants because it tastes so good. You can whip it up during the week for a quick dinner. Serve with a hearty pasta like penne, rigatoni, or maybe a bow tie. Toss in some good Italian sausages and peppers and onions. Dinner is served.
You all know how to do the add ins and pasta. Here is what I did for the sauce. It made enough for about six servings once it was added to 8 ounces of cooked pasta and a couple of sausages:
1 15 ounce can of crushed tomatoes, the better the tomatoes the better the sauce
1/2 cup vodka
1/2 cup cream
1 or 2 Tablespoons tomato paste, if you want more tomato flavor use more
You can add in your favorites. Garlic, Italian sausages, onions, red or green peppers, mushrooms…you know the routine.
Make sure you use a non flavored vodka. That orange vodka left over from Christmas is just not going to do it Let the sauce simmer over your add ins for a while before you pour it over the pasta. The alcohol will cook off so the kiddies and the parents can eat it.
We had a very flavorful Merlot with our pasta. Mister’s very favorite wine, The Velvet Devil 2009 Merlot is a smooth and tasty wine from Charles Smith Wines in Washington state. Hardly any tannins to rough up your tongue. Just lots of flavor to bounce around in your mouth. I figure, if we can get it here in the Midwest, you all in the rest of the country can probably find it. It runs about $13 a bottle. A bargain at twice the price. Enjoy!
