Yeah, yeah, yeah, it’s hot all over. I don’t feel like cooking indoors or outdoors. So, I mixed up a bowl of black bean salsa and that’s what we are going to have. Along with tortilla chips and some slices of Monterrey Jack cheese. Here is what I mixed up. Keep in mind, you can use bottled, canned, or fresh ingredients or any combination thereof! Since most farmer’s markets have many of these items, go for it! Stay cool.
Hot Weather Black Bean Salsa
1 can of Black Beans, rinsed
1 small tomato, diced small or 1/2 cup tomato salsa
1/2 jalapeno pepper, diced small or a few bottled jalapenos, chopped
1 ear of cooked corn, corn removed from the cob or 1/2 can of corn, drained
2 cloves garlic, minced or 2 teaspoons minced garlic
1/2 small purple onion, diced small or 4 scallions, chopped fine or shallots or white onion or yellow onion
2 Tablespoons olive oil or 2 Tablespoons canola oil
juice of 1 lime or 1 lemon
salt and pepper to taste
fresh cilantro or parsley to taste, chopped fine
Mix all together in a small bowl. Taste for additional seasonings. Let it sit in the fridge for a couple of hours so the flavors can meld. Feel free to add a bit more of this or a bit less of that. Serve with tortilla chips.
