I Love Potatoes, Recipe #2

I had the oven on to bake the chicken and vegetables so I figured I would bake potatoes of some sort to have with dinner. Since the half and half was getting very iffy, I decided to do a gratin. The pictures of the serving didn’t turn out, so this is the only good picture. I need to get a little tripod. I wiggle too much for a close up. Here is what I came up with:

Provolone and Mozzarella Potato Gratin

2 medium Russet potatoes, scrubbed and sliced very thin
kosher salt to taste
2 slices provolone cheese
1/2 cup shredded mozzarella cheese
1 cup half and half

Spray a small baking dish. Place a layer of sliced potatoes on the bottom of the dish. Sprinkle a bit of salt. Tear up one slice of provolone cheese and put it on top of the potato layer. Add another layer of sliced potatoes; sprinkle a bit of salt. Put 1/4 cup of the mozzarella cheese on top of the potato layer. Repeat with another layer of potato sprinkled with salt and the provolone. Use the remaining potatoes for the top layer, salt, and add the remaining shredded mozzarella cheese. Pour the half and half over the layers. Bake covered at 350 degrees for about 45 minutes or until the potatoes are tender. Remove the cover and bake for about 15 minutes until the cheese is golden on top. When done, remove from oven and let sit for about five minutes before serving. Made just enough for the two of us.
