We are currently under a Heat Advisory. What that means is, it is damn hot and the humidity is oppressive. That’s all. We are to check in on the elderly and make sure that the kids are well hydrated. A Heat Advisory.
Because it is so hot, we have been eating very simple meals. Lots of fresh produce and not much meat. Tonight was no different.
I made a Caprese Salad with the addition of avocado. Then, we had a grilled burger with no bun. I had onion on mine and Mr. Wii had cheese on his. We opened a bottle of ice cold Beaujolais and that was dinner.
Caprese Salad with Avocado
Fresh Mozzarella, 1/4 inch slices
Medium Ripe Tomato, 1/2 inch slices
Ripe Avocado, peeled and sliced in 1/2 inch slices
Parmagiano Reggiano, shreds or curls
Extra Virgin Olive Oil
Fresh Basil, julienned
Kosher Salt and Freshly Ground Pepper to taste
Place a slices of fresh mozzarella on the plate.
Top each piece of cheese with a slice of tomato.
Top each tomato with slices of avocado.
Drizzle with olive oil.
Salt and Pepper to taste.
Top with the julienned basil and Parmesan curls or shreds.
Best if served at room temperature.
